Bündner Mountain cheese, all 24 varieties, delicious. This knife, however, also cuts soft cheeses.

The blade is made of surgical steel material number 1.4116, material designation AISI 440A, Rockwell hardness 54-55 HRC.
The almost velvety handle is made of walnut wood.
A knife made by hand. Please wash by hand.
